It has snowed all day today – and it’s really really cold – but sadly, the snow is not settling. More is due to fall over the next few days. We’ll see.

Right now, the wind is howling outside. You know, that kind of sound you get in a scary movie. It’s brilliant!

I’m so glad I finally shared my Olympic memories with you all. I’m only sorry it took me so long. It means, however, that I can now concentrate on what’s been happening here recently (loads).

Our weekend was lovely and relaxed. How was yours?

We had friends over for dinner on Saturday night. We had the most wonderful food from our house chef who truly surpassed himself this time (I’m so lucky!). On arrival, our guests were treated to ‘robust caponata spooned onto panelle’ and Prosecco. We had ‘courgette and Taleggio risotto’ to start, followed by ‘carrot and coriander fritters with halloumi and sweet lemon dressing’, with roast parsnips and roast potatoes. Heaven food. Comfort food yet it looked highly sophisticated. All the recipes come from Alice Hart’s Vegetarian. Nice wine, nice company. Lovely evening. Although… faced with a mountain of washing up on Sunday morning, I suddenly remembered why we hadn’t entertained for a  while.

Not to be outdone, I baked this lovely lemon and thyme Madeira cake yesterday. It took a while (a long while) for the butter and sugar to become ‘pale and very fluffy‘… but it was worth the effort. Indeed, this was branded my best cake ever by my other half. The cake is tasty (the flavours work well). It has great consistency and the texture’s light.
